Did you mean how to change the clock face on your device?
The display overall. I go into settings but it won’t allow me to change anything. Also it won’t stay on. I have to press the button every time and rotating my wrist does not turn it on

yes
I suspect you are in Sleep Mode, preventing any brightness changes.
From the clock face, scroll left; toggle Sleep Mode off by tapping the moon icon.
