I have a shopify store with a specific niche

How do I create unique SEO optimized product pages, when each product is very similar to the rest. In this case, is it best to optimize category pages and the homepage instead?

Well, I'm in the process of writing descriptions AND titles, but the problem is- it's the same niche. So every product title and description is going to overlap quite often. So I don't see how it's even possible to have optimized landing pages for each and every product when they're all so similar.

Okay, now I see
You will need to define the targeted keyword for your landing page. Once you have it, you will have to update that keyword into the meta description, Page Title and URL as well.
You may use similar keywords, synonymous words

So I can reuse the same keywords within every product page? For ex, if my niche is coffee...and I sell coffee shirts, mugs, etc. I don't know how I'd create variety among the product pages when they're all just coffee products. The keywords would all be "cafe, coffee, mocha" etc. over and over, on each page.
